2 pounds Mako Shark Steaks, rinsed in cold water and
patted dry
2 Egg Yolks
1 1/2 cup Dry White Wine
1/2 cup Butter
1/2 cup Scallions, chopped
3 tablespoons Heavy Cream
Salt - to taste
Black Pepper, freshly ground - to taste
Fresh Parsley, chopped - as a garnish
While oven is pre-heating to 375° F, grease a
shallow, glass baking dish; melt half the butter in
a saucepan and sauté the Mako steaks (about 3
minutes, each side).
Remove steaks and place in baking dish; sprinkle
with scallions and pour white wine over and around
them; cover and bake (20 minutes).
Mix together heavy cream and egg yolks and beat
until light; spread cream mixture over top of steaks
and add salt and pepper, to taste.
Bake (10 minutes longer), baste fish one more time
with sauce from pan, dot with remaining butter,
garnish with fresh parsley and serve hot.
